I made no-knead bread for lunch with new friends today. Our banquet consisted of fresh bread, mustard, tapenade, olives, capers, blueberry, blackberries, grapes, strawberries, mozzarella cheese, cheddar cheese, and Laughing Cow cheese. (No butter needed!) Uncomplicated, no-pressure meals are best for me. By separating the food, I only have to eat what I like and as much as I want. Guests also appreciate choices. Having different options for each bite ensures that I will consume enough calories. Quick, easy, healthy, yummy… perfect!
